Egg Free Date And Walnut Cake |

- 1 cup white flour, Maida
- 1\2 teaspoon baking powder
- 1\2 teaspoon baking soda
- 1\4 teaspoon salt
- 100 grams margarine
- 3\4 cup sugar
- 3\4 cup milk
- 75 grams walnut halved, chopped
- 100 grams dates, soft pitted
- 50 grams raisins, golden
- 1\4 teaspoon nutmeg, grounded

- Preheat oven to 375? F. Grease and dust an 8- by 2-inch round cake pan, with flour, knocking out excess.
- Sift together flour, baking powder, baking soda and salt and keep aside.
- Beat margarine and sugar with an electric mixer until pale and fluffy.
- Alternately fold flour mixture and milk in batches, with a hand mixer until just combined.
- Fold in walnuts, dates, raisins and nutmeg with a metal spoon, (don't over fold). Turn the mixture into the prepared pan and sprinkle the few walnuts and raisins on the top. Bake in the oven for about 20 -25 minutes or until a skewer inserted in the centre comes out clean and dry. Cool in the pan for 10 minutes, then invert onto racks and cool completely.
