Pineapple Cheese Cake with Strawberry Topping |

- 2 tablespoons butter, melted
- 2 cups chocolate biscuit crumbs
- 3 oz packet pineapple flavored gelatin
- - - (such as Jell-O brand)
- 1 teaspoon gelatin (unflavored)
- 2 tablespoons sugar
- 2 8-oz. pkgs. Philadelphia brand cream cheese
- 1 cup whipping cream
- 1\2 teaspoon vanilla extract

- For the Topping:
- -
- 450 grams strawberries
- 1\2 cup sugar, caster
- 300 ml water
- 1 teaspoon cornstarch
- 1\4 teaspoon red food color (optional)

Directions: one line for each direction.when saved the lines will be numbered. |

- To make the base, stir the melted butter into the crushed biscuits and mix well. Press into the base of a 9 1\2 inch spring form pan. Refrigerate it for 30 minutes.
- Put 1\2 cup water in a small saucepan and bring to a boil, remove from heat, add jelly, gelatin and sugar, stir once and keep aside for 3 minutes. Return the saucepan over low heat and stir until gelatins and sugar is dissolved. Cool slightly then refrigerate until thickened but not set, stirring occasionally.
- Meanwhile place cheese in a large bowl and beat with a hand held electric beater until smooth, about 1 minute. Add cooled jelly mixture in three additions and beat until well blended, about 2 minutes.
- Working quickly, in another bowl beat cream and vanilla until, it is the same consistency as the cheese mixture. Then lightly fold in the cheese mixture.
- Pour into the prepared pan and chill for 4 hours. Spoon the topping over the top of the cheesecake. Refrigerate for 4 hours to set.
- Carefully remove the cheesecake from the pan and transfer to the serving dish.
- Make the Topping:
- Place strawberries, sugar and water in a saucepan and gently bring to a boil, simmer for 10 minutes on low heat. Cool slightly, then puree in a blender or food processor. Sieve into the saucepan. Dissolve cornstarch in 2 tablespoons of water and add to the strawberry puree. Return saucepan to heat, add food coloring, if using. Cook on medium-low heat until thick, about 5 minutes. Keep aside to cool.
- Note:
- To make biscuit crumb, crush the biscuits in a food processor.
